Directions

  1. Wash hands with soap and water.
  2. In a large pot, heat oil.
  3. Brown beef cubes.
  4. Add onion, garlic, salt, pepper, cilantro, and enough water to cover the meat.
  5. Cover pot and cook over low heat until meat is tender.
  6. Add tomatoes and tomato paste.
  7. Continue cooking for about 20 minutes.
  8. Add hominy and continue cooking another 15 minutes, stirring occasionally, over low heat.
  9. If too thick, add water for desired consistency.
