Fresh sweet basil and cheese give summer squash a burst of flavor.

Directions

  1. Wash hands with soap and water.
  2. Using a large, oven-proof frying pan, heat 1 tablespoon of oil on medium-high.
  3. Arrange squash in pan, add water, and season lightly with salt, pepper, if using, and basil.
  4. Cover and cook over medium heat for 5 minutes, or until tender crisp.
  5. Sprinkle with cheese and drizzle with remaining oil.
  6. Place under a preheated broiler and broil until cheese melts and browns slightly.
