Directions

  1. Wash hands with soap and water.
  2. Preheat oven to 400 degrees F. Place chicken between 2 sheets of plastic wrap; pound chicken to 1/4 inch thick.
  3. Coat chicken with breadcrumbs and place on foil-covered baking sheet.
  4. Discard remaining breadcrumbs.
  5. Bake 10 minutes.
  6. Top chicken with cheese; bake 4 to 5 minutes until cheese is melted and chicken reaches an internal temperature of 165 °F. Meanwhile, heat oil in a large skillet on medium heat.
  7. Add garlic and stir 1 minute.
  8. Add half the spinach and cook 1 minute.
  9. Add remaining spinach.
  10. Cook until wilted, turning occasionally.
  11. Serve with chicken.
