Tex-Mex Skillet

This dish is packed with lean protein in the form of black beans and lean ground beef. Chili powder, cumin, and fresh salsa add bold flavor to this Mexican-inspired recipe.

  1. Rinse lettuce, bell pepper, tomato, and jalapeño.
  2. Rinse and peel onion.
  3. Peel garlic.
  4. Chop or shred lettuce into bite-sized pieces.
  5. Mince garlic.
  6. Cut the jalapeño and bell peppers in half.
  7. Remove seeds with the tip of a knife.
  8. Dice peppers.
  9. Over a small bowl, grate tomato and onion using the coarse side of a box grater.
  10. Collect all pulp and juices.
  11. Grate cheddar cheese.
  12. In a colander, drain and rinse beans.
  13. In a large skillet over medium-high heat, cook meat, bell pepper, and garlic until meat is lightly browned.
  14. Drain to remove fat.
  15. Stir in frozen corn, beans, water, and spices.
  16. Bring mixture to a boil.
  17. Lower heat and cover.
  18. Simmer for 10 minutes, or until most liquid is gone.
  19. While meat mixture is simmering, make a salsa.
  20. Add jalapeño and a pinch of salt to the grated tomato and onion.
  21. Stir and set aside.
  22. Divide the meat mixture evenly among the 8 tortillas.
  23. Top each with grated cheese, salsa, and lettuce.
  24. Roll up and serve.
