Directions

  1. Wash hands with soap and water.
  2. Wash the ripe tomatoes.
  3. Cut out stem ends.
  4. Chop into small pieces and set aside in a large bowl.
  5. In a large pan, heat the oil over medium high heat.
  6. Add onion, green pepper, carrots and garlic.
  7. Stir-fry until tender, about three minutes.
  8. Add seasonings and tomatoes.
  9. Bring to a gentle boil.
  10. Lower heat and simmer gently, uncovered, until tomatoes turn to a sauce, about 40 minutes.
  11. Serve over freshly cooked pasta.
