This soup is great for lunch or dinner. Serve it with a salad and a whole wheat roll for a delicious meal.

Directions

  1. Wash hands with soap and water.
  2. Place the oil in a large pot or Dutch-oven style pan.
  3. Heat over medium-high.
  4. Add the onion and sauté until golden, about 2 to 3 minutes.
  5. Add the rest of the ingredients and mix well.
  6. Bring to a boil and then lower the heat to a simmer.
  7. Cook uncovered until the peas are tender, about 45 minutes.
  8. Serve hot.
