Apple Coffee Cake

This coffee cake provides a nice mix of apples, raisins, and pecans.

  1. Wash hands with soap and water.
  2. Preheat oven to 350 degrees F. Lightly oil a 13x9x2 inch pan.
  3. In a large mixing bowl, combine apples with sugar, raisins, and pecans; mix well.
  4. Let stand 30 minutes.
  5. Stir in oil, vanilla, and egg.
  6. Sift together flour, baking soda, and cinnamon; stir into apple mixture about 1/3 at a time, just enough to moisten dry ingredients.
  7. Turn batter into pan.
  8. Bake 35-40 minutes.
  9. Cool cake slightly before serving.
