Pear Quesadillas

An easy way to add more fruit to your day is to incorporate them into your meals. Canned pears and cheese go well together in this quesadilla, with added flavor from basil, onion, and pepper jack cheese.

Directions

  1. Sprinkle cheeses, basil, and onion on half of each tortilla.
  2. Place pear slices on top of other ingredients in each tortilla.
  3. Fold over filled tortilla and brush each side with olive oil.
  4. Heat the filled tortillas in a non-stick skillet until cheese melts, about 2 to 3 minutes on each side.
  5. Cut quesadilla into four pieces and serve immediately.
