Sweet Potato Pone

Ground ginger and molasses are combined with mashed sweet potatoes and cooked in the oven for a delicious dessert.

Directions

  1. Wash hands with soap and water.
  2. Preheat oven to 325 degrees F. Combine all ingredients in a 3-quart saucepan.
  3. Simmer slowly, stirring constantly, for 10 minutes.
  4. Pour into well-greased 9-inch baking pan.
  5. Bake for 30 minutes, stirring every five minutes for the first 20 minutes.
  6. Smooth down the top and allow to brown.
  7. Cut into squares and serve hot or cold.
